Good Day for Baking



With the gray cloudy sky and rain in the forecast, what better day to bake some yummy banana nut bread. I prefer mine less on the sweet side, letting the natural sweetness of the bananas to shine through. Also, I don't do white flour, period. So I am sharing my recipe which I think is healthier (whole wheat flour and less sugar) than most. Enjoy!

Banana Bread :
Preheat oven to 350
Makes 1 loaf
2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 beaten eggs
1-1/2 cups mashed ripe bananas (approx. 5)
1/2 cup sugar
1/2 cup cooking oil
1/2 cup chopped walnuts
1. Spray the bottom and sides of a 9x5x3 inch loaf pan with Pam and set aside.

2. Combine flour, baking powder, cinnamon, nutmeg and salt.

3. In another medium bowl, combine eggs, bananas, sugar and oil. Add egg mixture to flour mixture and stir until moistened. Fold in nuts.

4. Spoon batter into the loaf pan and bake in the oven for 55 minutes. Wooden toothpick should come out clean. If during baking it appears the loaf is getting to brown, you can cover it with foil for the remainder of cook time.

5. Cool in pan, remove from pan and wrap to keep fresh.
I love this banana bread with coffee in the morning. It can be warmed in the microwave or toaster oven and then buttered if desired. I had some, freshly baked, with some green tea this afternoon. Perfect treat for a cloudy day!
