Stuffed Zucchini!


Yup, our garden is still going off...even though it just got going. Lots of zucchini and I'm getting creative! Stuffed zucchini is my latest and greatest. SO good!! These were made with ground turkey, onions and cheese and some spices of course! I am very excited to try the zucchini enchilada recipe I got from a friend yesterday. And more muffins will be made this week as well.  I am really starting to appreciate how versatile and tasty zucchini is!

  2. We love zucchini here! Would you believe the zillion ways I've made it doesn't include stuffing it?! I need to correct that. Love it roasted and grilled with just a mist of olive oil & a little salt & paprika (allergic to black pepper). Another fav is to split it lengthwise (like you did), cut in half (so they're shorter & can be picked up with hands if youngin' choose to), mist a little olive oil on the open cut sides, season as you like (garlic powder or garlic salt is usually good....I'd use fresh, but it tends to slide off since they're not hollowed out), sprinkle on some fresh grated parmesean, and put under the broiler for just a few minutes. They're still crunching, but cooked a little (how much depends on how thick zuccs are), and best part is that not only are they yummy for adults, but I've never seen a kidlet turn it down yet! :>

  4. I just put some zucchini on the grill this weekend. I took a shortcut and used Italian dressing, salt & pepper. It was really good and so easy.

  7. My friend who gave me the zcchini enchilada recipe is really a "great gal"! And the recipe was fabulous! They turned out great!
